Bottarga (botargo or botarga in Italia) is a salt-cured mullet roe salted its natural envelope that is pressed and then dried out in the sun. It's distinct flavor is usually served as an appetizer, Bottarga is usually served as an appetizer with some drops of some fine extra virgin olive oil.  Alternatively, it can be grated over pasta, risotto or salads to give the dish a distinct seafood flavor. This is a kosher caviar. served with lemon and extra virgin olive oil as an appetizer, or shaved over pasta.
